Every autumn my grandmother made apple crisp when the first cool evenings arrived. The kitchen smelled of cinnamon before anyone even took off their coat. This is the version I make now, with tender apples under a crunchy oat topping.
Before we get to the recipe, here are a few notes about choosing the right apples, why I leave the skins on some of them, and what happened the year I tried to make the topping without butter.
Toss the apples with lemon juice, sugar, and cinnamon. Bake until tender, then add the oat topping.
